Dekomawashi

This particular cuisine comprises of potatoes, buckwheat dumplings, rock tofu, and round konnyaku that are skewered and grilled in miso sauce. It is referred to as "deku" because of the resemblance between the way the skewers are rotated during grilling and the way the "deku" dolls in Awa Ningyo Joruri (puppet theater) move their heads.
