The first period from March to May is called "Hatsu Katsuo (first bonito)" or "Nobori Katsuo (up bonito)", and the second period from September to November is called "Modori Katsuo (return bonito)" or "Kudari Katsuo (down bonito)", and each of them has a different flavor that attracts people.
