Tadayoshi Wada, an 89-year-old chef from a local restaurant in Kochi called Tomoyoshiya, stocks fish at the market from 5:00 a.m. and starts preparing food at his restaurant around 7:00 a.m. His restaurant serves sushi and side dishes, as well as Sawachi, a local dish from Kochi that is heaped with sashimi, katsuo tataki, sushi, fried food, stewed food, and pickles. His delicacies are so popular that people come from far and wide to buy them.
