On Shodoshima, the olive, a symbol of happiness and peace, is put to good use. The fruit, oil, branches, leaves, flowers, and lees are used not only as foodstuffs but in various other ways.
The prunings are finely crushed, fermented and matured for another year before being used as compost to grow olives and herbs.
There is also a workshop where you can make 'Happy Olive Leaf' bookmarks, as part of an initiative to experience agricultural reproduction.
